NAMAK PARA RECIPE INTRODUCTION:

Namak para is a crispy, tasty fried snack which is very popular in north India and it is also a vegetarian recipe, It is known as mathri in uttar pradesh, Bihar etc

This recipe is a crispy version, Like they generally puff up and becomes crisp while frying, This snack is often made in festivals like Diwali.

Nevertheless we can also make them according to our crave of eating it so it is not very much limited to festival making, one can make them anytime at home and it can be a good option for tea time snack.

There is also sweet version of these recipe which is known as shakkar pare, The recipe for which is already posted by me so you can refer that also,The only difference between both is one will be salty ,crispy and can be eaten at tea time with tea or coffee and the other version is sweet which can be served as sweets.

You can make them in bulk and can store them for longer periods of time in a air tight container for few weeks and enjoy it anytime, there won’t be any spoilage takes place if you keep them in a air tight conatiner.

This namak para is made by mixing all the ingredients together such as All purpose flour,wheat flour, Ghee/oil, Salt, carrom seed, baking soda and water to knead and make a dough.

This recipe hardly takes 30 to 40 mins of time and there isn’t very much work you need to do for making namak para,It is very easy and can be made with less effort.

So without wasting time follow my step by step instructions and begin making Namakpara.

INGREDIENTS:

  • All purpose flour 1 cup
  • Wheat flour 1 cup
  • Ajwain (Carom seed) 1 tablespoon
  • Cumin seed (Optional)
  • Baking soda ¼ tablespoon
  • Salt to taste
  • Oil
  • Water

RECIPE:

  1. Take a mixing bowl,Add all the flour like maida, wheat flour, salt, carom seeds, salt.
  2. Now, Add 6-7 Tablespoon oil and rub them between your palms for atleast 3-4 mins.
  3. Once done with rubbing take some flour in hand and hold it tight,if it doesn’t break apart then oil is properly mixed in the dough.
  4. Then,Add slowly water and knead it (dough should not be hard or soft)
  5. After making dough cover it with a cloth for atleast 30 mins
  6. After 30 mins, Take rolling board and make a small roll from the dough.
  7. Now on the board make a circle like you make for rotis ( It should not be very thin or thick).
  8. Take knife and cut it in a criss cross manner.
  9. There will be a diamond shape dough which you will get.
  10. Cover them with wet cloth if you are not frying it immediately.
  11. Now Take a heavy bottom pan,Add oils bring them hot.
  12. When the oil becomes hot enough, Add diamond shaped dough and fry them in medium to low flame from both side.
  13. It should be slightly brown in color.
  14. Take it out in a kitchen napkin.
  15. Once it gets cools, serve them with tea or coffee.
  16. keep them in air tight container for further use.

NOTE:

While making dough keep it mind that it should be very soft or hard.

When you are about to fry the namakpara then always fry it in low to medium flame.

Do not fry it in high flame otherwise it will look cooked from outside but remains uncooked inside and it won’t taste crispy.

Salt should be added according to your taste.

You can also make them using only all purpose flour or wheat flour, It is upto you here I have used both.
