GAJAR (CARROT) HALWA:

INTRODUCTION:

Gajar halwa is a very delicious recipe often made in the winter season.

This recipe is made in every house of north Indian families at least I can say that in the winter season.

This recipe serves as a dessert and is mostly made on an occasion or anytime when you have a craving for it.

This mind-blowing recipe is made with whole fat milk (Buffalo milk) sugar, clarified butter (Ghee) for a very authentic taste you can make khoya from whole fat milk. I generally prefer khoya you can also use condensed milk instead of khoya.

You can use red carrot which is available in the winter season it is not mandatory to use red carrot you can also use orange carrot but see to it that it shouldn’t be hard, stringy.

From a health point of view, carrot is a very good source of vitamin and minerals.

One can get a very good amount of vitamin A from carrots. For people who wear specs. Doctors usually recommend having carrots in their diet.

Nevertheless, This recipe takes a preparation time of 30-40 mins. and this recipe fills really fulfil your craving.

Sometimes we go for any occasion or when there is Shaadi season in our home or in relatives, we usually like to have gajar halwa.

But, now you don’t have to wait for an occasion to have the same..you can follow my recipe and you can have it anytime.

Let’s begin the procedure for making it and hope for the best:

INGREDIENTS:

  • Grated Carrot (Gajar) half kg
  • Whole fat milk – 1L
  • Ghee 2 tablespoon
  • Dry fruits (Kaju, Badam, kismis, pista)
  • Cardamom (Elaichi)
  • Sugar
  • Condensed milk (Optional)

RECIPE:

•Wash carrot thoroughly and grate it using a grater

•Then take a pan

Add ghee, pour the grated carrot

•Add chopped dry fruits, close the lid and

•Cook in low-medium flame for 10 mins

•Add cardamom and sugar (According to your taste,if you eat less sugary things then add accordingly )

•Cook until the water gets evaporated

•Take out the paste,Add milk in the pan cook until it becomes little fat like khoya

•Then add the entire paste of carrot

•Cook for 2-3 mins

•Serve with extra dry fruits

NOTE:

•You can also cook in a pressure cooker by adding small pieces of carrot but I would suggest to grate and cook in a pan it gives different taste

•Do not make an extreme hard khoya, just make milk fat by cooking more

•You can add dry fruits according to what you like or what you have in your home already.
